Getting Ready to Give Thanks

Tomorrow we’re hosting Thanksgiving dinner at our house, a holiday I love-entertaining, food, family-it’s just lovely. Today was a flurry of cleaning and not quite as much cooking as you’d think. Since everyone brings things it’s definitely not overwhelming. I’ll be cooking the turkey, of course, some other things, and a dessert, which I made today. I’ve made this for Thanksgiving before (I would have guessed two years ago, but notes on the recipe say I made it in ’05!), a Pumpkin Ginger Roll.

I love a jellyroll cake and was looking forward to writing how people tend to be afraid of making them, but they are really so easy and you can’t mess them up. Alas, for the first time my cake cracked when I unrolled it! I think it’s ok though-I just put the crack side down and wrapped it firmly in plastic wrap and stuck it in the fridge. The filling includes cream cheese, confectioners’ sugar, and crystallized ginger. The cake part is a spiced pumpkin cake. My favorite part of any jellyroll cake recipe is that you turn it out onto a clean kitchen towel and roll it up. It seems so old fashioned, and yet it’s what works.


I’ll have a nice picture of the finished product up tomorrow. And now, time to rest…
